I'd skip the sauce, but the bacon weave is solid gold. Wrap that weave around a stuffed porkloin and you are good to go.

that is the most beautiful thing i have ever seen.

cheese? that would be delicious but part of me thinks: why mess with pure bacon perfection? if i added cheese, i'd have to add jalapenos on top of the cheese

btw, speaking of sausage, i got some breakfast sausage from high point grocery to make a sausage/mushroom dip for NYE munchies tonight... it's great, just fyi.

Just made this yesterday. Made a mistake going with my favorite butcher's bacon as it was a bit too short for the weave. Ate it on biscuits. Yummo!

I think I'm going to make some fatties inspired by the Superbowl

Cardinal stuffed fatty? I'm going to make three variations for the super bowl:

cajun stuffed with rice dressing and wrapped in bacon
italian sausage fatty stuffed with mozarella and roasted peppers
greek lamb stuffed with feta and olives

I can't decide whether I'm gonna make chili or posole to round things out.

I decided: For the Cardinals, I'm making chicken fajita fatty. For the Steelers, I'm making a Roethlis-burger fatty.

I haven't figured out the exact recipes yet.

I made a KILLA Philly Cheesesteak fatty for the Championship games. I'll post pictures once my wife shows me how to do that.

I used 1/2 ground beef and 1/2 Jimmy Dean sausage. Not sure how many lbs I used, I just stuffed the combo into a 1 gallon zip-lock bag like so:

Smoked it for 2 hours. I don't have a proper smoker, just a Weber Kettle, but that does the trick for everything.

Glad yours were good. Mine came off the grill during the instant replay challenge where Roethlisburger didn't cross the goal line. They were gone before Pitt hit the field goal! Them bitches was good!
