Depends on the cheese really.
But run-of-the-mill, sharp, store bought, shredded cheddar
A few hours sitting out at least. Such cheese are processed enough for a long shelf life. If it's moldy toss it away (unless you're seriously in need of a cheese fix-then just whittle the moldy and crusty parts away til you find that cheese pay dirt)
