Gourmet. I like Bon Appetit but Gourmet has a great blend of "Hey we are fucking high brow but we refuse to condescend. We'll teach you what all this Italian shit is." Cooks Illustrated is cool but like a damn science textbook and also like a science nerd, a bad know-it-all (i.e. Insists its recipes are THE BEST, but um, they often are most certainly not).
Saveur is amazing and my fave but not on the list. Cooks Country by Cooks Illustrated is good and not so snobby. I will also give props to the recipes in Cooking Light and the little food digest whose name I forget, the Martha Stewart one.
Get the Gourmet Cookbook that came out a couple of years ago edited by Ruth Reichl. It has been awesome.
