I'm looking at a hybrid of the 2-

I'm not sure about stainless steel, as I think that's what I have now, and stuff sticks to it like crazy at the moment. It's probably just a crap pan, though.

non stick coating is toxic

use oil, grease, lard, PAM spray - whatever -- as the frugal gourmet used to say "hot pan, cold old, foods don't stick." and if they do, DEGLAZE and make a damn sauce

don't use abrasives when you clean your pan - the miniscule abrasions and scratches leave little pits for food to burrow into and stick
