Here's a dish for you in the Southern Tradition.
Red Eye Gravy.
Cook some country cured ham in an iron skillet. Let it really simmer hot to get the juices flowing. Remove the ham but leave the pan drippings in the skillet on a low simmer.
Either add a cup of you favorite black coffee or add a teaspoon of instant coffee and a cup of hot water. Stir coffee in and let it simmer about 2 minutes.
Spoon over open faced biscuits. mmmmm mmmmmm
And don't forget the eggs over medium and the HAM.
No sugar, no cream, no onions, no flour, no butter on the biscuits.
I use to make good biscuits but I can buy them at Kroger now and forget the hassle. The good biscuits are in the frozen dairy case (Pillbury, Swanson) frozen biscuits. Not canned.
