Why do mine always come out dry?

Sauteeing time per inch, anyone?

The cook really fast, depending on thickness, no more than a a minute or two a side. If they are really thick, sear both sides and finish in a 350 oven.

My favorite chops ever: Carrie's recipe (adapted from fucking Marfa):

Kale Smothered Pork Chops

1 Tbsp vegetable oil
4 bone-in pork chops (1 1/2 pounds total; 3/4 inch thick)
1 medium white onion, sliced
2 Tbsp flour
1 1/2 cups chicken or vegetable broth
1 bunch kale, tough stems and ribs removed, leaves cut into pieces

In a large skillet, heat oil over high heat.
Season pork with salt and pepper and cook until browned and cooked through, 3 to 4 minutes per side. Transfer to a platter and loosely tent with foil.
Reduce heat to medium, add onion, and cook until softened, 8 minutes.
Add flour and stir to combine.
Gradually whisk in broth and bring to a boil, stirring constantly, 3 minutes.
Add kale and cook, stirring, until wilted, 4 minutes.

Serve pork chops smothered in kale gravy.

Seriously. I love this shit.

got some leftover chops from dinner at my mom in law's place the other night.
she doesn't use anything but meat tenderizer on her steaks and chops (central pa thing? the natives add salt and pepper afterwards here i guess), so i diced them up cold, seasoned with kosher salt and pepper, chili powder and garlic powder, then drizzedl with olive oil and stirred it real good, then sauteed in more olive oil, drained the chunk and made some tacos. best way to utilize leftover chops.

turn those chops into scrapple, BJ, the Pennsy treat.

I had some TERRIBLE scrapple last time when I was in Chester, PA.

made these last nite

pork chops - on wire rack in baking dish
sprinkle with thinly sliced garlic
bake 20 min in hot oven

then sprinkle top with about 1/2 inch of
crushed cornflakes
sesame seed
a little mixed herbs
little bit chopped jalapeno pepper

bake further 10-15 min till topping is browned
